2. Lemon Cucumbers 3. ½ lb. Miniature Eggplants-You can roast them whole with garlic cloves, olive oil, & a little salt. Then mash all together for a quick and easy spread or dip. They do lose their purple color when roasted. Or slice them and add them to a stir fry. 4. Green Beans 5. 1 Alpine Onion 6. 1 Pint of Mixed Cherry Tomatoes 7.
